Ingredients:

- 2 lbs turkey breast, boneless and skinless - Salt and freshly ground black pepper - 2 tablespoons olive oil - 4 cloves garlic, minced - 1 tablespoon fresh thyme leaves - 1 tablespoon fresh rosemary, chopped - Zest of one lemon - Juice of one lemon - 1 cup cherry tomatoes, halved - 1 red onion, sliced thinly - Fresh parsley for garnish

Preheat your oven to 375°F (190°C). Season the turkey breast generously with salt and pepper. In a small bowl, mix together the olive oil, minced garlic, thyme leaves, rosemary, lemon zest, and lemon juice. Rub this mixture all over the turkey breast to coat it evenly. Place the turkey in a roasting pan along with the cherry tomatoes and sliced red onion. Roast in the preheated oven for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C). Remove from oven and let rest for at least 10 minutes before slicing. Garnish with fresh parsley before serving.
