Ingredients:
- 12 large sea scallops
- 6 slices of prosciutto, halved lengthwise
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon fresh ginger, grated
- Juice of one lime
- 1 tablespoon soy sauce
- 1 tablespoon honey
- Fresh chives for garnish
Instructions:
Preheat your oven to 400°F (200°C).
Season the scallops lightly with salt and pepper.
Wrap each scallop with a half slice of prosciutto and secure with a toothpick.
Heat olive oil in an oven-safe skillet over medium-high heat.
Sear the prosciutto-wrapped scallops for about 2 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for an additional 5 minutes or until the scallops are cooked through.
In a small saucepan, combine grated ginger, lime juice, soy sauce, and honey. Bring to a simmer over low heat until slightly thickened.
Drizzle the ginger-lime glaze over the baked scallops and garnish with fresh chives.
