Ingredients:
- 2 turkey breast fillets
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh rosemary, chopped
- Zest of one lemon
- 2 cloves garlic, minced
- 1 cup chicken stock
- Fresh parsley for garnish
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Lay the turkey breast fillets flat on a cutting board. Season both sides with salt and pepper.
3. In a small bowl, mix together the olive oil, thyme, rosemary, lemon zest, and minced garlic.
4. Spread the herb mixture evenly over one side of each turkey fillet.
5. Roll up each fillet tightly and secure with kitchen twine or toothpicks.
6. Heat a large ovenproof skillet over medium-high heat and sear the roulades on all sides until golden brown.
7. Pour the chicken stock into the skillet and transfer it to the preheated oven.
8. Bake for about 25 minutes or until the turkey is cooked through.
9. Remove from oven and let rest for a few minutes before slicing into rounds.
10. Garnish with fresh parsley before serving.
