Ingredients:
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon Cajun seasoning
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 2 cloves garlic, minced
- Juice of one lemon
- Fresh parsley for garnish
Instructions:
In a large skillet, heat the olive oil over medium-high heat.
Add the shrimp to the skillet and sprinkle with Cajun seasoning. Cook for about 2 minutes on each side until they turn pink and opaque. Remove from the skillet and set aside.
In the same skillet, add the red and yellow bell peppers, zucchini, and garlic. Sauté for about 5 minutes until the vegetables are tender-crisp.
Return the shrimp to the skillet and squeeze fresh lemon juice over everything.
Toss everything together to combine well and heat through.
Garnish with fresh parsley before serving.
