Ingredients:
- 1 pound beef sirloin steak, trimmed of visible fat
- Salt and freshly ground black pepper
- 1 tablespoon olive oil
- 2 cups arugula leaves
- 1 cup cherry tomatoes, halved
- Juice of half a lemon
- Shaved Parmesan cheese (optional for garnish)
Instructions:
1. Season the beef sirloin steak generously with salt and freshly ground black pepper.
2. Heat the olive oil in a grill pan over high heat until hot.
3. Sear the steak for about 3 minutes on each side for medium rare, or until cooked to your desired level of doneness.
4. Remove the steak from the pan and let it rest for a few minutes before slicing thinly against the grain.
5. In a large bowl, toss together the arugula leaves and cherry tomatoes with lemon juice, seasoning lightly with salt and pepper.
6. Arrange the sliced beef on a platter, topping it with the arugula salad.
7. Garnish with shaved Parmesan cheese if desired.
