- 1 lb veal, cut into cubes
- Salt and pepper
- 2 tablespoons ghee or clarified butter
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1/2 teaspoon cayenne pepper (optional)
- 1 cup diced tomatoes (fresh or canned)
- Fresh cilantro for garnish
- 1 head cauliflower, grated or processed into rice-sized pieces

1. Season the veal cubes with salt and pepper.
2. Heat ghee in a large pan over medium heat. Add the onions and sauté until golden brown.
3. Stir in the garlic and ginger, cooking for another minute until fragrant.
4. Add cumin, coriander, turmeric, garam masala, and cayenne pepper. Stir well to coat the onions.
5. Add the veal cubes to the pan and brown on all sides.
6. Pour in the diced tomatoes and bring to a simmer. Cover and cook on low heat for about 30 minutes or until the veal is tender.
7. Meanwhile, prepare the cauliflower rice by steaming it lightly with a pinch of salt until just tender.
8. Serve the spiced veal curry over a bed of cauliflower rice and garnish with fresh cilantro.
