Ingredients:
- 4 boneless, skinless chicken breasts
- Juice of 2 limes
- Zest of 1 lime
- 1/4 cup fresh cilantro, chopped
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- Freshly ground black pepper to taste
- 1 teaspoon ground cumin
- Lime wedges for serving
Instructions:
In a bowl, combine lime juice, lime zest, cilantro, garlic, olive oil, black pepper, and cumin. Mix well to create the marinade. Place the chicken breasts in a shallow dish and pour the marinade over them. Make sure each piece is well coated. Cover and refrigerate for at least an hour. Preheat your grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for about 6 minutes on each side or until fully cooked through and juices run clear. Transfer to a serving platter and garnish with additional cilantro and lime wedges.
