- 1 pork tenderloin (about 1 lb)
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon Dijon mustard
1. Preheat your oven to 400°F (200°C).
2. Season the pork tenderloin generously with salt and pepper.
3. In a large oven-safe skillet, heat the olive oil over medium-high heat.
4. Sear the pork on all sides until golden brown, about 5 minutes total.
5. In a small bowl, mix together the butter, garlic, rosemary, thyme, and Dijon mustard.
6. Spread the herb butter mixture evenly over the seared pork tenderloin.
7. Transfer the skillet to the preheated oven and roast for about 15 to 20 minutes or until the internal temperature reaches 145°F (63°C).
8. Remove from oven and let rest for a few minutes before slicing.
