- 1 pork tenderloin
- Salt
- Black pepper
- Olive oil
- Garlic
- Fresh rosemary
- Fresh thyme
- Dijon mustard
- Brussels sprouts
- Cauliflower
- Red bell pepper
1. Preheat your oven to 400°F (200°C).
2. Season the pork tenderloin generously with salt and pepper.
3. In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, and Dijon mustard.
4. Rub the herb mixture all over the pork tenderloin.
5. Place the tenderloin on a baking sheet lined with parchment paper.
6. Arrange the Brussels sprouts, cauliflower florets, and red bell pepper around the pork.
7. Drizzle the vegetables with a little olive oil and season with salt and pepper.
8. Roast in the preheated oven for about 25–30 minutes or until the internal temperature of the pork reaches 145°F (63°C).
9. Let the pork rest for a few minutes before slicing.
