Ingredients:
- 1 pork tenderloin (about 1.5 lbs)
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Zest of one lemon
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Season the pork tenderloin generously with salt and pepper.
3. In a large oven-safe skillet, heat the olive oil over medium-high heat.
4. Sear the pork tenderloin on all sides until golden brown, about 8 minutes total.
5. In a small bowl, mix together the butter, garlic, rosemary, thyme, and lemon zest.
6. Spread the herb butter mixture over the top of the seared pork tenderloin.
7. Transfer the skillet to the preheated oven and roast for about 15 minutes or until the internal temperature reaches 145°F (63°C).
8. Remove from oven and let rest for a few minutes before slicing.
