- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 teaspoons Cajun seasoning
- 1 cup quinoa, rinsed and cooked
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- Juice of one lemon
- Fresh parsley, chopped for garnish
1. In a bowl, toss the shrimp with olive oil and Cajun seasoning until well coated.
2. Heat a non-stick skillet over medium heat. Add the shrimp and cook for about 3 minutes on each side or until they are pink and opaque.
3. In a large mixing bowl, combine the cooked quinoa, red bell pepper, cherry tomatoes, and red onion.
4. Add the cooked shrimp to the quinoa mixture.
5. Drizzle with lemon juice and toss everything together until well mixed.
6. Garnish with fresh parsley before serving.
