Instructions:
Preheat a cast iron skillet over medium-high heat.
Rub the fish fillets with olive oil and season generously with Cajun seasoning and a pinch of salt.
Place the fillets in the hot skillet and cook for about 4 minutes on each side, or until the fish is cooked through and has a nice blackened crust.
In a small bowl, mix together the Greek yogurt, Creole mustard, honey, and hot sauce to make the sauce.
Drizzle the Creole mustard sauce over the cooked fish.
Squeeze fresh lemon juice over the top and garnish with chopped parsley.
