- 2 firm white fish fillets (such as redfish or catfish)
- Olive oil
- Cajun seasoning
- Lemon
- Fresh parsley
Creole Mustard Sauce:
- Low-fat Greek yogurt
- Creole mustard
- Honey
- Hot sauce (optional)
1. Preheat a cast iron skillet over medium-high heat.
2. Rub the fish fillets with olive oil and coat them generously with Cajun seasoning.
3. Place the fillets in the hot skillet and cook for about 4 minutes on each side, or until the fish is cooked through and has a nice blackened crust.
4. In a small bowl, mix together the Greek yogurt, Creole mustard, honey, and hot sauce to make the sauce.
5. Squeeze lemon juice over the cooked fish and serve with a dollop of Creole mustard sauce on top.
6. Garnish with fresh parsley.
