- Lean beef steaks
- Salt
- Freshly ground black pepper
- Olive oil
- Lemon zest
- Fresh rosemary sprigs
- Fresh parsley leaves
- Capers
- Anchovy fillets
- Lemon
- Red wine vinegar
- Garlic
1. Preheat a grill or grill pan over medium-high heat.
2. Season the beef steaks with salt, pepper, olive oil, lemon zest, and rosemary.
3. Grill the steaks for about 4 minutes on each side for medium rare or until desired doneness.
4. For the salsa verde, combine parsley, capers, anchovies, lemon juice, red wine vinegar, garlic, salt, and pepper in a food processor. Pulse until finely chopped but not pureed.
5. Serve the grilled steaks with a generous spoonful of salsa verde on top.
