Ingredients:
- 1 pound beef sirloin steak, trimmed of visible fat
- Salt and freshly ground black pepper
- 1 tablespoon olive oil
- 2 cups arugula leaves
- 1 cup cherry tomatoes, halved
- Juice of half a lemon
- Shaved Parmesan cheese (optional)
Instructions:
Preheat a grill pan over high heat.
Season the beef sirloin steak generously with salt and pepper.
Drizzle the olive oil over the steak and rub it in to coat evenly.
Place the steak on the hot grill pan and cook for about 3 minutes on each side for medium rare, or until desired doneness.
Remove the steak from the pan and let it rest for a few minutes before slicing thinly against the grain.
In a large bowl, toss together the arugula leaves, cherry tomatoes, and lemon juice.
Arrange the sliced beef on a serving platter and top with the arugula salad.
Garnish with shaved Parmesan cheese if desired.
